Add fresh noodles, season with salt and add salty wild chives add curds. 🇲🇳 CAMEL MILK TEA: Boil water and add tea leaves, fresh camel milk and mix. Stuff mixture within the dough and steam for an hour. 🇲🇳 GRILLED HEART: Slice heart into small and thin pieces. Skewer sliced heart and onions. Score the meat and add to grill. KARIM ABAD, HUNZA VALLEY - GILGIT 🇵🇰 BOILED YAK MEAT: Boil the meat for at least 3 hours in a broth with onions, ginger, garlic and salt 🇵🇰 YAK KEBABS: Marinate the meat with ginger-garlic juice, red chili powder, salt, lemon juice, garlic powder, vinegar and cooking oil. Skewer the meat and grill on charcoal for 30 minutes. Add cooking oil along the way. 🇵🇰YAK PULAO: Let rice sit in hot water for 30 minutes. Add the backbone meat and lower abdomen meat to a separate pot and cook for 30 minutes. Add onions, carrots, cumin, cumin leaves, tomato, pulao spices, chicken powder, coconut flesh, almonds, raisins, and sugar. Add the Yak stock (the water in the boiled yak pot). Add rice to this pot, cover it with a lid and cook for 20 more minutes. Put charcoal on the lid and continue cooking for another 20 minutes. 🇵🇰YAK MEAT WITH POTATOES: Place the meat in the pot. Add chopped onions, then a ginger-garlic salt mixture, and curry powder. Cover the pot and let it cook for 1.5 hours. Add tomatoes and potatoes. NOMAD FAMILY HOME IN DARKHAN MONGOLIAN BREAKFAST MILK TEA: Boil water and add black tea leaves, wild tea, fresh cow milk, and add salt. Mix with a ladle. Filter milk tea to separate tea leaves and store in a thermos. BOORTSOG (Fried dough): Prepare flour dough by mixing flour, milk, sugar, yeast, and milk grease together. Let it rest. Cut the dough into smaller portions & shape it into pieces. Prepare a hot pan and add animal fat then fry and turn around until it is brown. KHAILMAG (Carmalized Clotted Cream): Heat the Urum, add flour, and mix. Add raisins and sugar then mix. Remove the fat layer for use in the next dish Zambaa. Make Urum (clotted cream) from the boiled milk after removing the first layer after it’s been laid for 24hrs. ZAMBAA (Barley dough): Prepare barley flour and add the fat from Khailmag, then add sugar. Squeeze in the shape of one hand. AARUUL: Wet curd is stored in a fabric sack. Pressure it using a heavy stone. Let it dry and drain out water for some days. Use string to cut it into many sticks. Let it dry outside (air dry) for months, until it is tough. GOAT BOODOG: Heat the stone. Make a careful slit in the goat and remove all the internal parts. Insert metal string which will be used to tie the goat after stuffing. Trim the meat inside the sack. Prepare potatoes and onions. Stuff meat & veggies inside the sack. Add hot stones and layer with meat. Season with salt & black pepper. Tie the sack. Shake to evenly spread the stones. Use a blowtorch to burn hair and scrape it off. After, wash the sack. Use blowtorch for 4 hours until cooked. Apply a raw fat layer on top of the boodog and blowtorch it, then wait until it is melted. In the same pot, add bananas, boiled beef, and yams. Add salt and water. Cover with banana leaves, then cover with a small pot to allow it to steam. Let it sit for 30 minutes. Add water and oil and allow it to steam more. Mash everything together. Pour in warmed beef stock and continue mixing and mashing to make it softer. 🇹🇿 ROASTED GOAT: In a pot, add salt and the goat's neck and blood. Remove innards. Skewer it and place it on a roasting spit, rotating it every 20 minutes. After about an hour, rub lemon and salt on the goat. Continue roasting for about 2 more hours. 🇹🇿 MACHALARI (GOAT INTESTINES): In a large pot, add all of the organs and intestines (whole) and water. Place the pot on the fire and allow it to boil. Add bananas. 🇹🇿 GOAT LIVER: Skewer the liver and place it on the fire. Let it cook for about 15 minutes. Wrap it in cahl fat. Place it back on the fire for 10 more minutes. 🇹🇿 BLOOD & CLEAR SOUP: In a pot, boil all of the innards. In a bowl, add half a cup of raw blood. Add 3-4 ladles of white soup and mix. Add some goat tripe. 🇹🇿 KITOLOLO: Clean the greens and slice them thinly into a bowl. In a separate bowl, slice banana thin. In a separate bowl, crack and peel kweme (oyster nut) the grate it. In a pot, add leaves, banana, nuts, and more leaves. Add soda ash mixed with water. Place on fire. After 30 minutes, add sour milk (fermented for 2-3 days) then mash.
